Heat up 1 tbsp of olive oil in a medium sauté pan on medium heat. Open the package of gnocchi and add to the pan, cooking for about 2 minutes until golden. Flip over and cook for another 2 minutes.
Flip over the gnocchi and cook for another 2 minutes.
Heat up 1 tbsp of olive oil in a large sauté pan on medium heat and add a package of washed broccolini with a tsp of chopped garlic. You can also use fresh garlic (2 cloves). I prefer buying it pre-chopped because it’s so much faster. Stir the broccolini and garlic well. Then, cover for 5-10 minutes until soft.
Add half a jar of marinara sauce into a small saucepan on medium low. Once the sauce is at the desired temp, add in the cooked gnocchi and stir well.
Place about a cup of washed arugula into a bowl. Add the gnocchi sauce mixture to the bowl. Top it off with 3-5 stalks of broccolini.
