Gnocchi is one of my favorite go-to dinners and one we always have in rotation. My husband and I work crazy schedules, so cooking a gourmet meal at night is usually not an option for us. I look for meals that are healthy but also super simple to put together.
Gnocchi are super simple to make and oh so delicious! This recipe uses gnocchi that is made of cauliflower, so it’s pasta you can feel good about eating.
What Are Gnocchi Made Of?
Traditional gnocchi are made with potatoes, flour, and eggs. However, there is an amazing pre-made gluten-free and vegan gnocchi option at Whole Foods that is absolutely delicious. These gnocchi are made with pureed cauliflower and potato flakes with no dairy products or gluten, so they’re perfect for people with milk or gluten sensitivities.
Easy Gnocchi Ingredients
- Package of Gnocchi (I like Whole Foods Gluten Free Gnocchi)
- Arugula
- Broccolini (I like Trader Joe’s Organic Baby Broccolini)
- Chopped Garlic
- Olive Oil
- Pasta Sauce (I like Whole Foods Tomato & Mascarpone Pasta Sauce)
How to Make an Easy Gnocchi Recipe
Step 1: Heat up 1 tbsp of olive oil in a medium sauté pan on medium heat. Open the package of gnocchi and add to the pan, cooking for about 2 minutes until golden. Flip over and cook for another 2 minutes.
Step 2: Flip over the gnocchi and cook for another 2 minutes.
Step 3: Heat up 1 tbsp of olive oil in a large sauté pan on medium heat and add a package of washed broccolini with a tsp of chopped garlic. You can also use fresh garlic (2 cloves). I prefer buying it pre-chopped because it’s so much faster. Stir the broccolini and garlic well. Then, cover for 5-10 minutes until soft.
Step 4: Add a jar of marinara sauce into a small saucepan on medium low. Once the sauce is at the desired temp, add in the cooked gnocchi and stir well.
Step 5: Place about a cup of washed arugula into a bowl. Add the gnocchi sauce mixture to the bowl. Top it off with 3-5 stalks of broccolini.
Step 6: Stir and enjoy!
We usually use marinara sauce, but we’ve also made this gnocchi recipe with alfredo and pumpkin sauces, and it’s still a fantastic meal. You could also opt for a vegan sauce to easily turn this into a 100% gluten-free and vegan recipe.

- 1 cup arugula 1 cup per bowl of gnocchi
- 1 package broccolini I like Trader Joe’s Organic Baby Broccolini
- 2 tbsp olive oil extra virgin
- 1/2 jar pasta sauce I like Whole Foods Tomato & Mascarpone Pasta Sauce
Instructions
